De la Estancia organic polenta is made from a special variety of corn grown in the foothills of the Andes. The unique low-starch, high-protein characteristics of this "flint" corn coupled with the fact that its growing cycle is twice as long as common corn result in a polenta that is smoother and creamier than other polentas and which cooks naturally in just 1 minute although it is not instant, processed or pre-cooked in any way.
